Pumpkin Overnight Oats

I recently made a delicious discovery by introducing overnight oats to pumpkin chia pudding, and let me tell you, they were a match made in heaven! If you're looking to elevate your breakfast game and try something new, give this recipe a try. Here it is for you to make your own culinary matchmaking magic:

Ingredients
1 cup old-fashioned rolled oats
1-1/2-2 cups milk of your choice (We use oat. Coconut is good, too.)
1/4 cup organic pumpkin puree (homemade or store-bought)
1-2 tbsp chia seeds
1/2-1 tsp ground pumpkin spice mix

1/2-1 tsp ground cardamon

1/2-1 tsp ground nutmeg
1 tsp vanilla extract
1-2 tbsp nut butter (optional, but too good to pass up)
1-2 tablespoons of maple syrup
pinch of salt (optional)
Directions
Combine ingredients in a small bowl, mix well, and transfer to pint size mason jars. Seal with an airtight lid, place in fridge overnight. Eat cold or warm in the morning. Enjoy!
