Pumpkin Overnight Oats
I recently made a delicious discovery by introducing overnight oats to pumpkin chia pudding, and let me tell you, they were a match made in heaven! Ingredients
1 cup old-fashioned rolled oats
1-1/2-2 cups milk of your choice (We use oat. Coconut is good, too.)
1/4 cup organic pumpkin puree (homemade or store-bought)
1-2 tbsp chia seeds
1/2-1 tsp ground pumpkin spice mix
1/2-1 tsp ground cardamon
1/2-1 tsp ground nutmeg
1 tsp vanilla extract
1-2 tbsp nut butter (optional, but too good to pass up)
1-2 tablespoons of maple syrup
pinch of salt (optional)
Directions
Combine ingredients in a small bowl, mix well, and transfer to two pint size mason jars. Seal with an airtight lids, place in fridge overnight. Eat cold or warm in the morning. Add fruit on top for extra goodness. Enjoy!
